The International Association of Culinary Professionals Board of Directors visits Panama edit

Our idea has always been to put our country in the International map of Gastronomy. This week, with the visit of the International Association of Culinary professionals Board of Directors to Panama, we have accomplished something important. The message is out: "we welcome you to our country, which is a melting pot, one of the richest ones when it comes to a variety of exotic fruits, vegetables, seafood, fish and delectable meats that would satisfy the most refined and trained palates and connoisseurs."

Yesterday we first visited The Panamá Canal Administration Building and its Murals. It was inaugurated on July 15, 1914, exactly a month before the Canal itself. Since then, this veritable legacy from the past has continued to dominate the Balboa area from atop his rolling hill. The Administration Building houses the Panamá Canal's Authority's (ACP) chief administrative offices, such as those of the Administrator and the Deputy Administrator, located since 1914 in the north wing of the second floor, overlooking Balboa and the Canal's Pacific entrance.

1_12 The next stop was the Miraflores Visitors Center, a new window to the canal. The facilities were officially inaugurated and opened to the public in April 2004, and it is an expression of the permanent commitment of the Panama Canal Authority to strengthen the public knowledge of the Canal. I was greatly impressed with the features of the center and the security of the area. It has a fully equipped theater, three observation terraces, two snack bars, a restaurant with panoramic view, a nice gift shop and a hall for special events.

3_9 The delectable lunch was hosted by the Panama Canal Authority at the house of the Honorable and Mrs. Alberto Aleman  Zubieta in Balboa Heights, Ancón, Panamá. The menu was designed for the occasion by Panamanian Chef Charlie Collins, and prepared by his crew from Ma Cuisine, his catering  service  business.

The menu consisted of:

4_7 Hors d' Oeuvre:
Corn empanadas with Aromatic Sweet Pepper Sauce from El Valle

Appetizer:
Corvina Ceviche, Carpaccio Style with Lettuces and Uchuvas

Soup:
Coconut cream soup with Grilled Scallops, Curry and Cilantro Oil.

5_4 Main Course:
Cold lobster in its shell with Avocado, Tomatoes Concassé, Mandarin Orange Mayonnaise.

Dessert:
Tropical Fruits Sorbets: Curuba, Soursop, Passion Fruit and Pineapple Cashew Fruit Nuts Tuile.

6_1 After lunch we visited the Panamá City Mayor's house, and at 5 PM sharp we had a reservation to visit "El Palacio de las Garzas", or Panamanian Presidential Palace in the beautiful old part of the city: the Casco Antiguo. Mrs. Vivian de Torrijos, a very charming lady with a perennial smile and joyful eyes, received our group.

Dinner was at "Manolo Caracol". We had a blast! Will post some photos later.

Today we have a lunch scheduled, hosted by the Bristol Hotel and designed by Executive Chef Cuquita Arias de Calvo. Then a very interesting workshop, and at 7:30 the party will start at the residence of Chef Patricia McCausland-Gallo.

MARK: it was really fun, many interesting people to talk with. So much knowledge in only one group…There was a lot of food too!

SAILU: every human been is unique, we all have likes and dislikes and interesting stories and knowledge. Been down to earth is the only way I know to make friends and learn from them smile

KELLY: what’s really fun to me is that I have posted photos from when I was blond, read head, and from when I had my hair dark (my original color)...I am back to dark now and I love it! When you come to Panama, can we please schedule a trip to visit your uncle Juancho? I would love to interview him and take pictures of his delicious cocadas…

Merveilleux!  The International Association of Culinary Professionals Board of Directors could not have found a better and more charming hostess than you.  And those menus are just fabulous.  What a wonderful way to place Panama on the map!  The only thing I regret is that I have not joined you in this singular tour.
